Smoked Flavours

Have you ever been to a local burger restaurant that has the most delicious smoked mayonnaise? Or have you tried to make smoked food and realised that it is actually a lot of effort? I never thought that I would be able to make delicious smoked food, and it has nearly always been my choice of flavours when we are able to eat out.

And then, I discovered Smoked Flavours. Made from 100% wood chips, Smoked Flavours is an easy healthier way to get a traditional smoky flavour into any meal. It is ideal for meat, marinades, sauces, basting, cheeses, dips. Their products instantly adds smoke flavour to almost any food that would benefit from real smoke flavour and aroma. Dash or brush on any meat, poultry, or vegetable – since it is very concentrated, use sparingly as a few drops will be sufficient. These are made from smoldering damp wood chips to generate as much smoke as possible. This smoke is then funnelled into a condenser where it is cooled and so results in the formation of condensation. This condensation is collected, filtered and purified. The end product is highly concentrated liquid smoke which has the same flavour of the wood type used, you are then able to achieve the same taste that would be generated by traditional smoking processes. How did this business start: My interest in liquid smoke started in late 2012 when I found a recipe online for Chicken Makhani (Indian Butter Chicken) where one of the key ingredients was liquid smoke. I searched high and low for it in South Africa but came up empty handed, this was when I searched for international manufacturers. Once I finally received my first bottle and was able to complete the Chicken Makhani I was hooked.

Soon I was trying it on steaks, beef burgers, chicken breasts and even pasta sauces. Liquid smoke’s versatility got me thinking and I realised that there was a gap in the market, this is when I started researching it in earnest.

It contains no PAHs (potentially carcinogenic components) and adds no calories or fat. It works wonders in curries, vegetarian dishes, sauces, cheese, dips, and marinades or even directly on meat or fish – giving indoor cooking the flavour of outdoor cooking. Plus it’s kosher and halaal. Some flavours are also suitable for vegans.

The manufacture of liquid smoke is quite complex and goes through a few stages before it becomes the great tasting product we know. It is 100% natural wood flavour and there are no artificial flavours.

Damp wood chips from your selected wood type are heated to smouldering point in a large retort, this generates more smoke than actually setting the wood alight. This smoke is funnelled into a compression chamber where this rapidly cools the smoke, causing condensation. This condensation is filtered purified and aged for anything from a few months to a year.

We have different variants; Mesquite, Apple, Cherry, Hickory, Mixed Hardwood and European Beech. Hickory is the most popular wood used for smoking and so is the one most people are familiar with. It works well with meat and sauces/marinades for pork, chicken & beef. Mixed hardwood is a combination of hickory and oak, both are hard woods so this works on the same items as the Hickory. Finally the European Beech is a softer wood and so is therefore a good all-round smoke that can be used on meat, sauces, marinades as well as seafood, fish and cheeses & dips.

The possibilities of what can be achieved with liquid smoke are endless, if you have an imagination you will be able to create some spectacular meals.
The European Beech in particular enables you to get a smoky flavour into things that you would never associate being enhanced by the flavour of smoke. Last year a catering customer of ours made a Smoked Cardamom Ice-cream! There is also a rage in the US where liquid smoke is being used in cocktails.

Which is your personal favourite product: Extremely difficult to say; I use every product myself! The smoked salt and olive oil we use on a daily basis as it provides a more complex flavour and different notes to any dish. Cherry is a favourite on nachos, Hickory and Mixed Hardwood on meats, Beech on everything and I like using the Apple to give a more pronounced smoky note to gammon, especially when prepared in the oven or a pressure cooker. Pulled pork is transformed with Beech added to it!

What have been your most popular products: Hickory and Mixed Hardwood are certainly the better sellers as most people are familiar with Hickory smoked meat products. European Beech is the most versatile of the flavours, which makes it very popular for retail and commercial applications, especially for burger sauces and vegan protein options.

Tell me a bit more about these product flavours: Liquid smoke in not readily available in South Africa and smoked food is becoming increasingly popular. Liquid smoke enables you easily add a smoky flavour to any meal by adding it during the cooking process or even to prepared meals.
It is made from real wood chips and contains no artificial flavourings or colourants. The same taste you get from a traditional smoker, is the same taste you get from our liquid smoke.
 Hickory – most familiar smoke flavour, used on bacon, ribs & chicken breasts. Best results when used with “heavier” meats like beef & pork. Ideal for marinade, basting, potjie, soup or pasta sauce.
 Mesquite – Best results when used with “heavier” meats like beef & game. Ideal for marinade, basting or potjie
 Hickory & Oak – Common woods used for smoking, good with red meat, pork & game. To be used in marinade, basting sauce, pasta sauce or biltong recipe.
 Beech – Very versatile and mild liquid smoke and so the liquid smoke works well when used to flavour fish, mayo, dips, butter or cream cheeses with no bitter aftertaste. Made with hardwood chips.
 Applewood – Probably the most used fruit smoke wood, the flavour is milder and sweeter than Hickory. Ideal for poultry, beef, pork (especially ham), game birds, lamb and some seafood. A mild with a subtle sweet, fruity flavour.
 Cherrywood – Slightly sweet fruity smoke that’s great with just about everything. It is a very dark liquid smoke so will impart a deep, golden-brown finish to the meal. A sweet mild, fruity flavour.

Cakey by Davy

Lockdown really screwed a lot of us over!  So many people have lost their jobs, and just have no idea where to turn.  I know of families that are starving, and friends that have no idea when their next income will be received.

And then, a friend introduced me to Davy.  I gave him a call to find out more about this business that started during lockdown, and I KNOW that he is going to change the world one delicious cake at a time.

Davy lost his job at a well-known restaurant during lockdown where he had been a cleaner.  His new baby was only a few weeks old, and they had no idea how they were going to survive.  But Davy doesn’t give up!  He hustled, taught himself to bake by watching YouTube videos, and now is able to stay at home to look after their children while his wife is at work.  He then bakes from 5pm – 12am to ensure that his cakes are fresh for any orders that he has, and he has really found his creativity and passion.

Tell me about your business:  I bake delicious cakes!  I specialize in Vanilla, Carrot and Chocolate cakes, cupcakes and muffins.

How did you get into this business:  When Covid19 pandemic forced us into lock down I started teaching myself how to bake by following videos on YouTube. It was theory only because my oven stove was not yet connected. When we finally moved to level 4 of lockdown, an electrician connected my stove. I started doing muffins for my family and then moved to cakes. It was fun because I was teaching myself and I enjoyed it.

When did you start baking:  It was end of May when I started selling my muffins and cakes, and it was a huge relief for me because i was getting something for my family to eat. In June I officially started baking and I have never looked back. I have lovely friends who supports me. I can mention a few – Charlie K, Inge, JP, Luschka, Tania, in UK my friend Tendai in UK, –  all these people played a big role in starting this business.

How much are your cakes:  My cakes cost R150 medium and R250 for large.

Mütea

Today is International Tea Day, so what better way to celebrate than with a fabulous local tea brand that is taking this to a whole new level!

I am a huge tea fan, and working from home means I am indulging in many more pots of tea than usual, as well as trying interesting flavours and brews.  So when I saw Mütea I was intrigued – in case you didn’t know, Muti is a term for traditional medicine in Southern Africa. It is derived from the Zulu word umuthi, and is now a colloquial word for medicine in general.  I loved this play on words, and also the fact that herbal teas are jam-packed with antioxidants and goodness – a natural muti indeed.

Tell me a bit more about your business: mütea is derived from the word ‘muti’, a term for traditional medicine in Southern Africa. mütea medicinal loose leaf tea was created to encourage and maintain a more sustainable approach to overall health and well-being.

How the idea to start this come about: I was drinking herbal tea for health reasons versus resorting to noncritical medication, which I was unprepared to take with its long list of side effects. After 2 months of drinking herbal tea I had resolved my health issue entirely. Byron joked (as my maiden name is Melissa Oosthuizen, emphasis on the double ‘o’ in Oosthuizen) that we should start a tea company calle mootea. We settled on mütea instead.

What makes your tea so special: All the ingredients used are locally, organically and ethically sourced. Our blends make use of a health shotgun effect incorporating numerous herbs with similar health benefits and properties into each blend. Everybody is different, and because our teas are designed for a slow sustainable approach to health and wellness they are gentle enough for daily use to encourage lasting long term health habits. Our teas are also plastic free products making use of a corn starch environmentally friendly plastic alternative for our packaging.

Why do you recommend loose tea leaves: We recommend loose tea leaves for environmental and meditative reasons. Most tea bags have been chemically treated and is an unnecessary manufacturing process which has a negative effect on the environment. It is also a more intentional process to brew loose leaf tea, encouraging a slower more meditative lifestyle.

What are your different flavours: We use various mints, buchu, rooibos and other herbs that enhance the fresh botanical flavour profile of our teas.

Which is your personal favourite: Our detox tea is awesome, rooibos and buchu are two of the eight herbs in that blend giving it an amazing flavour and our sleep tea is also fantastic and works a treat.

What makes your honey different to that you can get in the shops: Our honey is infused with CBD.

I see you have extra & standard strength honey – please explain more: Our honey is meant to be taken daily as part of one’s dietary plan, the extra strength has a bit more CBD in it so it can also be used for more immediate pain management assistance. It is also a richer honey flavour being the fynbos.

I am all for more natural health treatments, and if it is included in a comforting cup of tea what could be better?  I also adore the fact that Melissa encourages us all to slow down – lockdown has shown me that so often we are rushing around doing 10 million things for other people, and not truly taking care of ourselves.

So why not pour yourself a lovely cup of tea, sit outside (before it gets too cold!) and just BE.

Bean Stew

Guys, this lockdown has got all of us thinking about our finances, our future, and how to spend our free time.  I have been loving spending a little extra time in the kitchen, and trying out recipes that I don’t usually – or trying out new recipes that can ensure our food stretches a little further and lasts us for a few meals.

This bean stew is one of husbands favourites, and I added some bacon bits this time (yum yum!), although the original recipe is from my vegan friend so this would be perfect for Meat Free Monday.  You can also chuck in some Chick Peas to an alternate texture.  It’s quick, easy, and super delicious.


Ingredients:
2 tablespoons Oil (sunflower, canola or olive)
1 Onion (chopped)
2 Garlic Cloves (crushed)
2 chopped Chillies/Chilli Flakes (optional & according to taste)
2 heaped dessertspoons Tomato Puree or Paste
1 Stock Cube (veg or beef) dissolved in 250ml boiled water
2-3 tins of Beans (black or speckled) (drained)
Salt & Pepper to taste
2 teaspoons Sugar

Method:
1) Sauté onions in oil on medium heat, until softened.
2) Add garlic & chillies (if using) to onions & sauté for a few seconds.
3) Add tomato puree/paste to onions & garlic & allow to cook for +- a minute (remember to stir, to make sure the mix does not burn).
4) Pour in about a quarter of the stock & stir it in, to prevent the mixture from drying out.
5) After a minute, add the drained (but not rinsed) beans plus the rest of the stock & give it a stir.
6) Add the salt, pepper & sugar, then stir in.
7) Place the lid on the pot & allow to cook at a medium heat, until most of the liquid has reduced.

NB : Remember to keep an eye on the stew while it is cooking & stir frequently because beans will catch & burn very easily.

Serve with rice or mash & enjoy!!  It should produce 4 to 6 decent servings.

This is a staple in our house, and we have really been enjoying it during lockdown – you can buy nearly all the ingredients in the house and have them ready in the pantry for the next meal.

Marshmallow Icing

This is the icing my mum has made for me ever since I can remember!  They were on all my birthday cakes, & she would often make cakes for us through high school & we would still fight over who got to lick the bowl once she had iced the cake.

You need a double boiler, or a make-shift version of one, as this is what really makes the icing work.  And an electric beater – if not, rope your husband in to do the beating with a whisk (as I had to early this morning!).

Ingredients:
1½ cups Sugar
¼ tsp Cream of Tartar
⅛ tsp Salt
⅓ cup Water
2 Egg Whites
1½ tsp Vanilla Essence

Method:
1. Place sugar, cream of tartar, salt, water and egg whites in the top of a double boiler.
2. Beat with a handheld electric mixer for 1 minute.
3. Place pan over boiling water, being sure that boiling water does not touch the bottom of the top pan (if this happens, your frosting could become grainy).
4. Beat constantly on high speed with electric mixer for 7 minutes.
5. Beat in vanilla.
6. Use this immediately to ice the cake as it sets/hardens quite quickly.

Children’s Biscuits

Last night husband said he felt like something yummy, but we didn’t have anything available on hand.  I searched through our cupboards & found a few ingredients to make his favourite childhood treat – Children’s Biscuits aka Smartie Biscuits aka Butter Biscuits.  They are so easy & super delicious.  Although he wasn’t happy with the size of the first batch I made so the next few were much bigger – I think his memory is a bit skewed as to the comparison from when he was much smaller himself…

Ingredients:
500g Margarine/Butter
1 ½ cups Sugar
1 tsp Vanilla Essence
4 ¾ cups Flour

Method:
1. Cream margarine/butter and sugar.
2. Add vanilla essence and sifted flour.
3. Beat until smooth (quite a stiff dough).
4. Roll into balls, place on baking sheet and press down with a fork.
5. Decorate with Smarties.
6. Bake at 180° for 18-20 minutes.

We initially pressed the Smarties into the biscuits, but then husband requested I add them to the dough & we then get a surprise as to whether there will be some chocolate in the cookie we’re eating.  You could even add chunks of chocolate bar, cocoa powder, chocolate drops, or anything yummy that you would like.  Hundreds & thousands also work a treat!

This recipe also allows you to fill your entire cookie jar, so you don’t need to bake on a daily basis – unless you can scoff them in one go!

Easy Microwave Fudge

If you are anything like me, this nationwide lockdown has made me eat my feelings.  I have found every excuse under the sun to bring out my recipe book and try something new – and majority of the time it has eased my sweet tooth.  There is not much available at the shops in terms of baking ingredients, so I boxed clever and made a staple that I could actually find the ingredients in my grocery cupboard.  PLUS you can make it in your microwave, and it is so quick and easy that you will find yourself reaching for this time and time again.  Just please be careful of the hot sugar – this can cause serious burns and I would hate for any of you to get injured.

Ingredients:
125g Butter
400g (500ml) Sugar
1 can Condensed Milk
5-10ml Salt
25ml Vanilla Essence
10ml White Vinegar

Method:
1. Line a pan with silicone paper or foil.
2. Spray with Spray & Cook.
3. Microwave the butter for 1 minute in a deep microwaveable dish at 100% power.
4. Add the sugar, condensed milk and salt (to taste).
5. Do not stir, then microwave for 1 minute on 100% power.
6. Stir well with a wooden spoon.
7. Microwave for 10 minutes, stirring every 3 minutes.
8. Add the vanilla essence and vinegar.
9. Stir with a wooden spoon until the mixture thickens.
10. Spoon into your pan, and smooth out.
11. Leave to cool slightly, and cut into squares before the fudge gets too hard.
12. Leave to cool completely and turn out from pan.
13. Break into blocks and enjoy!

This is honestly the easiest fudge recipe, and we have been making this since I was a small child.  I love that you can make it in the microwave as well so you don’t have to stand for ages stirring the mixture in the pot.  I add the salt to help break the extreme sweetness, but my mum has been known to add coffee or nuts too.  Let me know any additions that you add too – I am sure I will be making this a few more times over the coming weeks…

Three Lads and a Toucan

Recently I saw a post on a friend’s timeline that mentioned a company roasting coffee here in South Africa.  After doing some digging, I realised that I knew two of the owners and knew that I immediately had to find out more.

This time in isolation has made me realise the importance of supporting local, and I have spent quite a bit of time researching businesses that are making a difference, producing amazing products/services, and those that more of the public need to be aware of.  Being stuck indoors for almost 2 weeks (let’s be honest – none of us really know what day it is, or even what time it may be) means that at home we have been experimenting with much cooking, baking, and MANY cups of coffee.  So I was thrilled to receive my bags of 3 Lads and a Toucan today and it has made my day so much brighter.

Tell me a bit more about what you do: We supply specialty grade Coffee beans and ground coffee that we source directly from origin and roast locally in SA. We are based in Durban and are a proudly South African business.

What makes your coffee so different to others: We only use specialty coffee beans. This means that you are always going to get a beautiful clean cup of coffee with incredible flavours and taste. We certainly are not the only guys using specialty beans but quality is something that we will never compromise.

Where did the passion for this come from: From my perspective – Running our own business has always been a passion of ours and the idea of supplying a great quality coffee from Brazil actually started from school days when I was privileged enough to attend a Scottish school for 3 months on an exchange program . Long story short – one of my best mates in the Scottish school was a Brazilian chap and we started speaking about a potential business between the two countries 15 years ago! I also have the privilege of running this business with my best mate and my brother which makes it even more epic! Oh and we are all addicted to coffee!

How did you decide on your name: It a funny story which is pretty much summarised in a poem on the back of our coffee packs but to give you the plain version : We travelled to Brazil a few times, always in search of a Beautiful Toucan. We never found it BUT on our second to last trip we were travelling through a big coffee farm where our Brazilian friends were giving us a run down of how coffee is processed. Whilst we were driving, this Beautiful Toucan shot past us, it actually almost flew into our windscreen … the car screeched to a sudden halt and we all jumped out , very relieved that we didn’t hit the toucan. From that day onwards we knew that Coffee was the game we were meant to be in. It did after all give us our precious Toucan!

We have also realised how dependent SME’s are on people taking a “Local is Lekker” Approach. One can often also see what impact supporting local businesses has on those businesses owners and the people that they employ- which is a big drive for us to support local.

La Vie En Rose

“But first, brunch…

Recently I was invited to an event at KCC La Vie En Rose (see their Facebook & Instagram pages) for a Bloggers Brunch, & I immediately accepted!  In case you haven’t noticed, I absolutely love my food, & brunch is that in between meal that just makes me super happy.  With husband working Saturdays we don’t often get the chance to go out & experience new restaurants, so this was really special.

I arrived early on Saturday morning at Killarney Country Club, & drove through to the restaurant – it is on the property of KCC, & past where the gym is so don’t feel like you are getting lost!  I was immediately greeted by the friendliest staff, along with a glass of mimosa before I headed to the table of bloggers that were already seated & snapping pics of the gorgeous surroundings.

What a great group of people I got to meet!  From foodies, to tech babes, to YouTubers, to lifestyle bloggers – we were all there & I am so grateful for the friendliness & acceptance in the circle of Joburg “influencers”.  But, I digress…

We were treated to a table groaning under the weight of the lavish spread laid out for us.  From Nutella stuffed pancakes, to bagels with salmon, cream cheese & avocado – there was literally something for everyone.  My sweet tooth was in heaven & I couldn’t resist trying a little of everything, including the cannelloni which made the sounds around me fade into the background & my entire attention zoned in on what was entering my mouth.

My plate was filled to the brim, & I managed to scrape it clean before ordering a Chai Latte, which was the perfect ending to the most perfect morning.  The entire experience left me with a huge smile & desperate for any excuse to go back.  I rolled out of the restaurant to my car & immediately called my husband to say that we needed to make a plan to go back together (*cough cough* wedding anniversary?)

All in all, I have to say that I rate the entire experience a 10/10.  The ambience, food & drinks were all outstanding – the only problem I have is that there was no more room in my belly to try everything that was there.  It was such an honour to be invited to this event, & I will definitely be back as soon as possible.

Grumpy Snacks

My health journey has introduced me to many new businesses that really get me excited.  I have a terrible sweet tooth, & definitely eat my emotions.  ie if I’m feeling happy/sad/excited/depressed/nervous/stressed/any other emotion, I will reach for food.  And preferably something sweet, laden with sugar & filled with empty calories.  I have been consciously trying to make a change, & one thing I am focused on is only having healthy snacks at home & at the office.  It doesn’t always work, but every small step is still a step forward in the right direction.

Grumpy Snacks is a small business that make me laugh out loud when I spotted their social media posts, & I really loved their whole vibe.  The owners are easy to talk to, willing to chat & passionate about what they are offering.  I am sure you will be as obsessed as I am once you learn more about them!

Tell me a bit more about your business: I am hungry. ALWAYS hungry. In the blink of an eye hungry becomes grumpy. And then no one is safe, especially Tim (my partner). Snacks are the reason our relationship has survived (and why I still have any friends). But the ready-to-eat healthier alternatives are hard to find. This is why Grumpy Snacks was born and why we’ve dedicated ourselves to mastering the art of chickpea roasting. This little legume packs a nutritional punch, and we spent months in our kitchen perfecting the crunch. Our chickpeas are dry roasted. Afterwards they are coated in ethically sourced milk chocolate from Cocoafair OR a small fraction of coconut oil and spices are added to them. We use only natural ingredients and each step has been developed to ensure maximum nutrition is available for absorption. This one’s for the snackers of South Africa. We hope it makes you a little less grumpy too.

Where did your business name come from: We know many people out there who become pretty grumpy when they’re hungry (much like me)! We started Grumpy Snacks cause we wanted to offer a better-for-you snack option to stop the grump!

When will they be launching: Our sea salt dry-roasted chickpeas are currently available in packaging-free form in Nude Foods in Zonnebloem and Nude Foods in Newlands (both Cape Town). Our packaged sea salt and milk chocolate dry-roasted chickpeas are due to be available in select Wellness Warehouse stores countrywide in Feb 2020.

What makes your snacks different to others available in supermarkets: We have strived to seek a balance between achieving delicious taste and preserving nutritional value. In doing so, we have created a better-for-you snack that is really enjoyable, yet doesn’t leave you with that regretful feeling junk food so often does!

Do you have a secret ingredient: Not a secret ingredient per se (we are very transparent about all the ingredients we use cause we believe people should understand exactly what is going into their bodies). But we certainly a secret process that helps arrive at the perfect crunch while preserving as many of the nutrients as possible.

Oh my word you guys – how delicious do these sound?  My tummy is literally grumbling just reading through their responses…  I adore roasted chickpeas & these just sound like they have created the perfect product.
